I get asked to share this recipe a lot. This is one of my family's most favorite meals. They ask for it a lot. Now I know that this is not the most tasty sounding recipe, but I promise you it is very very good. Give it a try I am sure you will like it.
4 tbsp. butter or margarine, divided use
1/4 cup chopped green peppers
1 tbsp flour
1 tsp salt
dash of pepper
1/2 cup milk
1 egg, slightly beaten
1/4 cup sour cream
1/2 cup mayonnaise
1 (16 oz.) can Chop Suey vegetables, rinsed and drained
1 can Tuna, drained and flaked
2 tomatoes, cut in wedges (optional)
1/2 cup crushed chow mein noodles

Melt 2 Tablespoons butter/margarine in saucepan, add green peppers and cook 2 minutes(I didn't use green peppers this time)

Blend flour, salt, pepper. Gradually add milk,: cook, stirring until slightly thickened.

Blend together egg on bowl then add to pot. Add sour cream, and mayonnaise; stir into sauce. Add vegetables and tune.

Turn into greased 1 quart baking dish. arrange tomato wedges on top, if using.

Bake at 375 degrees F for 25 minutes.
Melt remaining 2 tablespoons butter in skillet and add chow mein noodles and heat until slightly browned. Sprinkle over top of baked casserole.
I'm going to have to try this. It sounds so simple and looks tastey.
