Tasty Tuesday Recipe Link Up 


Does that not look so good. I made it, yes I made that perfect looking dessert. O.K. so by far I am not a Gourmet Chef or a Chef for that mater, but I like to think I can hold my own in a kitchen. Well my kitchen at least. So let me tell you how the Lemon Curd imitation cake came to light. My girlfriend "J" asked me 2 week ago if I wanted to go to a cooking demonstration at Williams-Sonoma. I of course said sure. You never know, I might learn something new to cook. Well if you are ever in the Asheville area on a Sunday you just have to go. The Chef who does the demonstration is wonderful. She takes the time and answer all your question, no matter what you ask. She makes it all look so easy and all the food she cooks is so delicious. So this leads me to the Lemon Curd Cake. She showed us how easy it was to make a Lemon Curd Cake. Yum!! Perfect for Spring. OK so yes I could have made the Lemon Curd, but that is not me. I need the simplified version. So I came up with my shoe string version of this cake. So let me share it with you.



So you will need the following items

1 box of Golden Vanilla Cake Mix
1 Large Tub of Whip Topping
2 Lemons
1 Pack of Pre-Made Lemon Pudding
2 tbs sugar

It is so easy you will just love how easy it is. Make the cake according to the box directions. Allow cake to cool. Now take one lemon and squeeze as much juice out of it as possible. Take the juice and mix with 2 tbs of sugar to make a sweet lemon juice. You will want to divide the juice and sugar mixture, spread half on each cakes. This will soak in after it sits for just a few minutes. But all two puddings in a bowl and fold in half a tub of whip topping. You are wanting to make a light and fluffy lemon pudding. This will go in the middle of the two cake layers. Layer you cake with the lemon mixture and on top of cake spread the other half of the whip topping. Take the other lemon and make some zest and sprinkle on top. I cut a slice of lemon and added it on top for a little bit of flare.
