
This is my favorite day of the week. You get to start a fresh week off on the right foot. Fully knowing what you are going to be cooking for the next week. This week is dust off the crockpot week. I am going to be cooking as many meals in the crockpot as possible. Also I have includes a recipe for Not Your Mothers Tuna Bake. My family love love loves this dish. I know it sounds weird but it taste awesome. So give it a try. Sometimes something new is what everyone needs. Monday - Autumn Beef Stew
Tuesday - Not Your Mother's Tuna Bake
Wednesday - Country Ribs with corn relish
Thursday - Slowed Simmered Chicken Rice Soup
Friday - Autumn Vegetables and Pork Chops
Saturday - Slow Cooker Chicken & Dumplings
Not Your Mother's Tuna Bake
4 tbsp. butter or margarine
1/4 cup chopped green pepper
1 tbsp. flour
1 tsp. salt
dash of pepper
1/2 cup milk
1 egg slightly beaten
1/4 cup sour cream
1/2 cup mayonnaise
1 (16oz) can Chop Suey vegetables, rinsed and drained
1 (6 1/2oz) can tuna, drained
2 tomatoes, cut in wedges (optional)
1/2 cup crushed chow mein noodles
Melt 2 tbsp. butter or margarine in saucepan, add green peppers and cook 2 min.
Blend flour, salt, and pepper. Gradually add milk: cook, stirring until slightly thickened.
Blend together egg, sour cream, mayo: stir into sauce. Add vegetables and tuna.
Turn into grease 1 quart backing dish. Arrange tomatoes wedges on top, if using
Bake at 375 degrees F for 25 minutes
Melt remaining 2 tbsp butter in skillet and add chow mein noodles and heat until slightly browned. Sprinkle over baked casserole.
PLEASE NOTE - It is very important that you rinse and drain the chop suey vegetables very well or this dish will not taste right.
