Potato Leek Soup Recipe

With the cold weather knocking on my front door I have started to cook more soups & stews. I love this time of year. It means more use of my crockpot and soup pot. I decide to make a recipe from my childhood. Now I have never made this for my family so I was a little worried that they would not like it. Well I guess wrong! My Husband loved it and wanted to know why I had never made it before. So this will now go into our family cookbook and me a winter staple on my meal plan. So here you go. I hope your family will enjoy it as much as mine did.
Potato Leek Soup
serves 4 - 6

  2 Leeks washed & sliced into rings
3 medium potatoes peeled & diced
1 cup onion diced
4 cups chicken broth
1 tbs dried parsley
1 tsp thyme
1 tsp minced garlic
2 tbs butter
 1 cup milk 

Saute the leeks, onions, butter and garlic for about 15 minutes on medium heat. You are just wanting to soften the leek and onions. You do not want to brown them. Once down add the broth, diced potatoes and seasoning. Bring to a boil and cook until the potatoes are fork soft. About 20 minutes. Turn the heat done. With a potato masher you want to mash the potatoes slightly to form a thicker soup. Once complete add the cup of milk and heat all the way though. 

If you like you can serve with some shredded cheese and some croutons for taste.
