Mexican Stir Fry Recipe for Under $5.00

What's for dinner tonight? How about Mexican Stir Fry for under $5.00. Here is my recipe. I hope you enjoy.

1 lb Beef Strips ($2.37)
1 Pepper Sliced (50¢)
1 Onion (22¢)
1 can Mushrooms (49¢)
1 can Diced Tomatoes with green chilies (33¢)
2 TBS Taco Mix (15¢)

I would really have liked to use fresh mushroom but I didn't have any and I make my own Taco Mix but you can use a envelope of season if you would like.

It is supper easy to make. Brown beef in a fry pan. Once cooked through remove from pan and set aside. Now stir-fry the pepper, onions and mushrooms until almost cook. You still want a crunch to your pepper or at least I do. Then add tomatoes, taco mix and beef. Stir all together to heated through.

I served mine with white rice, some shredded cheese and a soft shell taco.

Total spent on my meal was $4.65 that feed my family of 3 and there was left over for my hubby to take to work the next day.  I hope you enjoy it.

  1. This recipe sounds delicious! Thanks for the great idea--- the boyfriend is getting sick of Asian stir fry so this should mix it up! :)
