Meal Planning Mondays with Not Your Mom's Tuna Bake!

Yes this is not your Mom's Tuna Bake. There is no noddles in this recipe. Give it a try, I promise you that you will love it. My new Meal Planning Monday is going to try something new. I feel like we eat the same meals over and over again. We need a change in our meals. So do you have something new I can try? Leave me a link in the comment and I might just give it a try. 4 tbsp. butter or margarine, divided use
1/4 cup chopped green peppers
1 tbsp flour
1 tsp salt
dash of pepper
1/2 cup milk
1 egg, slightly beaten
1/4 cup sour cream
1/2 cup mayonnaise
1 (16 oz.) can Chop Suey vegetables, rinsed and drained
1 can Tuna, drained and flaked
2 tomatoes, cut in wedges (optional)
1/2 cup crushed chow mein noodles


Melt 2 Tablespoons butter/margarine in saucepan, add green peppers and cook 2 minutes(I didn't use green peppers this time)


Blend flour, salt, pepper. Gradually add milk,: cook, stirring until slightly thickened.


Blend together egg on bowl then add to pot. Add sour cream, and mayonnaise; stir into sauce. Add vegetables and tune.


Turn into greased 1 quart baking dish. arrange tomato wedges on top, if using.


Bake at 375 degrees F for 25 minutes.

Melt remaining 2 tablespoons butter in skillet and add chow mein noodles and heat until slightly browned. Sprinkle over top of baked casserole.

Not Your Mothers Tuna Bake -

1/2 cup mayonnaise
